FOREST RISOTTO FOR TWO

3 dl fresh chanterelles
1⁄2 teaspoon Metsä/Skogen Wild Mushroom Salt
1 teaspoon Metsä/Skogen Forest Spice Mix
1 small onion
1 clove of garlic
2 tablespoons of olive oil
2 dl risotto rice
25 g of butter
8 dl of water
Zest & juice of 1⁄2 lemon
1 dl grated parmesan
Chopped parsley leaves

Fry the chanterelles in a dry pan. Add chopped onion, garlic and risotto rice to the pan. Saute lightly in olive oil in for a few minutes. Pour water into the pot a scoop at a time, stirring the mixture all the time. Add the next scoop when the previous one is almost completely absorbed.
Add Wild Mushroom Salt, Forest Spice Mix and lemon peel to the pot. Risotto takes about 20 minutes to cook. Take the pot off the stove and stir in the butter and parmesan. Finally, season with lemon juice and parsley.
